While most of us would prefer unhealthy foods, such as fast food, pizza or even something that is deep fried, there are plenty of healthy diet foods available that taste just as good. Learning how to prepare these healthy foods can be fun and exciting. You should experiment and come up with new recipes. Always use fresh ingredients for the best flavors.
The following recipe is for a complete chicken dinner that is low in fat, low in cholesterol and low in salt. This is just one example of a healthy diet meal.
Ingredients:
3 Pounds Boneless Skinless Chicken Breast
3 Potatoes
1 Large Sweet Onion
1 ½ Cup Carrots
½ Teaspoon Crushed Rosemary
½ Teaspoon Crushed Thyme
½ Teaspoon Paprika
½ Cup Low Sodium Chicken Broth
½ Cup 1% Low Fat Milk
¼ Cup Flour
Preheat your oven to 400 degrees Fahrenheit. Cut the potatoes up into small chunks. You may leave the skins on or you can peel the potatoes. Chop the onion in small ¼ inch pieces. Cut the carrots up into small chunks or you can use fresh baby carrots and cut these into two. Using at least a 4 quart baking dish, place the chicken breasts, breast side down in the pan. Slowly pour over the chicken broth. Mix the rosemary, thyme and paprika together. Using about ½ of this mixture, sprinkle it over the chicken. Now add the vegetables and sprinkle with the remaining herb mixture. Cover the baking dish and place in the preheated oven for 80 minutes. After the 80 minutes, remove the dish, uncover and put back in the over for another 10 minutes. Remove from the oven and serve.
You can also make this optional gravy. Skim any fat from the juices. Using 1 cup of the juices, mix in the milk and flour in a small sauce pan. Heat over medium heat mixing well until the mixture is thick and boiling. Remove from the heat and serve this gravy over the chicken and vegetables.
Other options are to use organic vegetables and free range chicken breasts. You can also use a 3 pound whole chicken but should remove the skin from the chicken before baking.
